Transitional Government builds greek social economy

Penne Recipe with Tuscan sausage and Swiss chard

A simple quick and really tasty pasta recipe

Ingredients

• 800g zwitserse chard
• 2 tablespoons olive oil
• 1 small onion, finely cut
• 1 clove garlic, finely cut
• 75 g sliced pancetta bacon
• 150 g of Tuscan sausages, remove skin and cut into pieces
• 50 ml cream
• pinch of dried chilli flakes
• 400 g penne rigate
• sea salt and freshly ground black pepper
• freshly grated parmesan cheese to serve

Cooking

1. Cut the ends of the swiss chard and pull the green leaves of the white stems
2. Cut the stems into fine matchsticks and blanch in boiling salted water for 1-2 minutes or until soft. Drain and set aside
3. Blanch the green leaves in boiling salted water for 4-5 minutes, then drain and chop roughly
4. Heat the olive oil in a large heavy-bottomed saucepan, add the onion and garlic and cook gently for 5-6 minutes or until tender
5. Add pancetta and the sausage and cook over a low heat for 20 minutes, then drain off the excess fat
6. Add cream to the sauce and bring to boil. Stir in the blanched chard stems and leaves, add the dried chillies. Then cook for 4-5 minutes. Season to taste with salt and freshly ground black pepper
7. Cook the penne in a large pan of boiling water according to packet instructions until al dente. Drain largely and keep pouring 100 ml of broth with penne
8. Add the pasta to the sauce, stir well and add a small part of the reserved water as needed to loosen sauce
9. Simmer for 2 minutes. Then serve with freshly ground black pepper and grated Parmesan cheese
